Palak Raita

Ingredients

-500 grams curd
-2 cups spinach leaves, finely chopped
-1 green chilli, finely chopped
-1 tsp cumin powder
-1/2 tsp black pepper powder
-Salt to taste
-1/2 cup of water

Directions

- To prepare, place a microwave-safe dish in the microwave. Add water and spinach to the dish. Cook for approximately 3 to 4 minutes, or until the spinach leaves reach a tender consistency. Once cooked, strain the leaves to remove excess liquid and allow them to cool before further use.

- Using a hand blender, thoroughly blend the curd until all lumps are eliminated.

- Add green chili, cumin powder, black pepper powder, and salt to the mixture. Stir thoroughly until all ingredients are well combined.

- Add blanched spinach leaves and mix well.

- Serve chilled with rice or parantha.

Comments

You can garnish the Palak Raita with some roasted cumin seeds or a sprinkle of chopped coriander leaves for extra flavor and visual appeal.
